Quick Rava Idli Recipe: Instant South Indian Delight

Here's a quick and easy recipe for Rava Idli:

Rava Idli, a popular South Indian dish, is known for its soft texture and delightful taste. Unlike traditional idlis, Rava Idli is made with semolina (rava) and doesn't require fermentation. Let's dive into the steps to create this instant and delicious treat.

Ingredients:

  • 1 cup semolina (rava)
  • 1 cup plain yogurt (curd)
  • 1/2 cup water
  • 1/2 cup grated carrot (optional)
  • 1/4 cup finely chopped cilantro (coriander leaves)
  • 1/4 cup grated coconut (optional)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (split black gram)
  • 1/2 teaspoon baking soda
  • 2 tablespoons oil
  • Salt to taste
  • Ghee or oil for greasing the idli molds

Instructions:

1. Preparing the Batter:

  1. Dry Roast Semolina:
    • Heat a pan and dry roast the semolina (rava) over medium heat until it turns light golden. Ensure not to over-roast, as it can affect the texture of the idlis.
  2. Cool and Mix Yogurt:
    • Allow the roasted semolina to cool. In a mixing bowl, combine the cooled semolina with yogurt and water. Mix well to form a smooth batter without any lumps.
  3. Add Vegetables and Seasoning:
    • Add grated carrot, chopped cilantro, grated coconut (if using), and salt to the batter. Mix thoroughly.
  4. Prepare the Seasoning:
    • In a small pan, heat oil. Add mustard seeds and urad dal. Once the mustard seeds start to splutter and urad dal turns golden, add this seasoning to the batter. Mix well.
  5. Add Baking Soda:
    • Just before you are ready to steam the idlis, add baking soda to the batter and mix it well. The batter will become frothy.

2. Steaming the Idlis:

  1. Grease the Idli Molds:
    • Grease the idli molds with ghee or oil.
  2. Fill the Molds:
    • Pour the batter into each mold, filling them about 3/4th full.
  3. Steam the Idlis:
    • Steam the idlis in a preheated steamer for about 12-15 minutes or until a toothpick inserted in the center comes out clean.
  4. Cool and Demold:
    • Allow the idlis to cool for a couple of minutes before demolding. Use a spoon to gently scoop them out.

Serve and Enjoy:

Serve the Rava Idlis hot with your favorite chutney, sambar, or a side of coconut chutney. The soft texture and aromatic flavor make them a perfect breakfast or snack option.

Conclusion: Instant Gratification in Every Bite

Rava Idli offers a quick and convenient way to enjoy the authentic flavors of South Indian cuisine without the need for fermentation. With minimal preparation, you can relish these soft and spongy idlis, making them an ideal choice for a delightful meal.
