Recipe for Tteokbokki

Ingredients:

For the Rice Cakes (Tteok):

  • 2 cups sweet rice flour (also known as glutinous rice flour)
  • 1 cup water
  • 1/2 teaspoon salt

For the Tteokbokki Sauce:

  • 3 tablespoons gochujang (Korean red chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon corn syrup or rice syrup
  • 2 teaspoons gochugaru (Korean red chili flakes, adjust to your spice preference)
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated

Additional Ingredients:

  • 1 cup fish cakes, sliced (optional)
  • 2 hard-boiled eggs, halved (optional)
  • 2 green onions, chopped
  • Sesame seeds (for garnish)
  • Roasted seaweed (optional, for garnish)

Instructions:

1. Prepare the Rice Cakes (Tteok):

  • In a mixing bowl, combine sweet rice flour, water, and salt. Mix until smooth.
  • Transfer the mixture to a heatproof dish or a shallow pan.
  • Steam the mixture for about 20-25 minutes or until a toothpick inserted comes out clean.
  • Once cooked, let it cool slightly, then cut into bite-sized pieces.

2. Make the Tteokbokki Sauce:

  • In a bowl, mix together gochujang, soy sauce, sugar, corn syrup or rice syrup, and gochugaru. Set aside.
  • In a saucepan, heat vegetable oil over medium heat. Add minced garlic and grated ginger. Sauté until fragrant.
  • Add the prepared sauce mixture and 2 cups of water. Bring to a simmer, stirring constantly until the sauce thickens.

3. Assemble Tteokbokki:

  • Add the sliced rice cakes (tteok) to the simmering sauce.
  • If using, add fish cakes and hard-boiled eggs.
  • Cook over medium heat, stirring gently, until the rice cakes are fully coated and the sauce thickens, about 10-15 minutes.

4. Garnish and Serve:

  • Garnish with chopped green onions, sesame seeds, and roasted seaweed if desired.
