Recipe for a Vegan Buddha Bowl

Delicious and nutritious recipe for a Vegan Buddha Bowl:


Ingredients:

For the Bowl:

  • 1 cup quinoa, cooked
  • 1 cup sweet potatoes, diced and roasted
  • 1 cup chickpeas, cooked or canned, drained and rinsed
  • 2 cups kale or spinach, sautéed
  • 1 avocado, sliced
  • 1 cup shredded purple cabbage
  • 1 cucumber, sliced
  • Sesame seeds (for garnish)
  • Fresh cilantro or parsley (for garnish)

For the Tahini Dressing:

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup or agave nectar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Quinoa: Cook the quinoa according to the package instructions. Fluff with a fork and set aside.
  2. Roast Sweet Potatoes: Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes in olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes or until they are tender and golden.
  3. Sautéed Chickpeas: In a pan, sauté the chickpeas with a bit of olive oil until they are heated through and slightly crispy. You can add a pinch of salt and your favorite spices for extra flavor.
  4. Sautéed Greens: In the same pan, sauté the kale or spinach until wilted. Season with salt and pepper to taste.
  5. Prepare the Tahini Dressing: In a bowl, whisk together tahini, lemon juice, water, soy sauce, maple syrup, minced garlic, salt, and pepper until smooth.
  6. Assemble the Buddha Bowl: Divide the cooked quinoa among the bowls. Arrange the roasted sweet potatoes, sautéed chickpeas, sautéed greens, sliced avocado, shredded purple cabbage, and cucumber in sections on top of the quinoa.
  7. Drizzle with Tahini Dressing: Drizzle the tahini dressing over the bowl.
  8. Garnish: Sprinkle sesame seeds and fresh cilantro or parsley on top for garnish.
