Ingredients:
For the Bowl:
- 1 cup
     quinoa, cooked
- 1 cup
     sweet potatoes, diced and roasted
- 1 cup
     chickpeas, cooked or canned, drained and rinsed
- 2 cups
     kale or spinach, sautéed
- 1
     avocado, sliced
- 1 cup
     shredded purple cabbage
- 1
     cucumber, sliced
- Sesame
     seeds (for garnish)
- Fresh
     cilantro or parsley (for garnish)
For the Tahini Dressing:
- 1/4
     cup tahini
- 2
     tablespoons lemon juice
- 2
     tablespoons water
- 1
     tablespoon soy sauce
- 1
     tablespoon maple syrup or agave nectar
- 1
     clove garlic, minced
- Salt
     and pepper to taste
Instructions:
- Prepare
     the Quinoa: Cook the quinoa according to the package instructions.
     Fluff with a fork and set aside.
- Roast
     Sweet Potatoes: Preheat the oven to 400°F (200°C). Toss the diced
     sweet potatoes in olive oil, salt, and pepper. Roast in the oven for about
     20-25 minutes or until they are tender and golden.
- Sautéed
     Chickpeas: In a pan, sauté the chickpeas with a bit of olive oil until
     they are heated through and slightly crispy. You can add a pinch of salt
     and your favorite spices for extra flavor.
- Sautéed
     Greens: In the same pan, sauté the kale or spinach until wilted.
     Season with salt and pepper to taste.

     smooth.
- Assemble
     the Buddha Bowl: Divide the cooked quinoa among the bowls. Arrange the
     roasted sweet potatoes, sautéed chickpeas, sautéed greens, sliced avocado,
     shredded purple cabbage, and cucumber in sections on top of the quinoa.
- Drizzle
     with Tahini Dressing: Drizzle the tahini dressing over the bowl.
- Garnish:
     Sprinkle sesame seeds and fresh cilantro or parsley on top for garnish.
