Here's a simple and delicious recipe for vegan ramen:
Ingredients:
For the broth:
- 8 cups
     vegetable broth
- 4
     cloves garlic, minced
- 1
     thumb-sized piece of ginger, sliced
- 1
     onion, chopped
- 2
     tablespoons soy sauce
- 1
     tablespoon miso paste
- 1
     tablespoon sesame oil
- 1
     teaspoon rice vinegar
- 1
     teaspoon maple syrup or agave nectar
- Salt
     and pepper to taste
For the ramen:
- 8 oz
     ramen noodles (check the ingredients to ensure they are vegan)
- Tofu,
     extra-firm, pressed and cubed
- 1 cup
     shiitake mushrooms, sliced
- 1 cup
     bok choy, chopped
- 1 cup
     carrots, julienned
- Green
     onions, chopped (for garnish)
- Sesame
     seeds (for garnish)
Instructions:
- In a
     large pot, sauté the garlic, ginger, and onion in sesame oil until
     fragrant.
- Add
     the vegetable broth, soy sauce, miso paste, rice vinegar, maple syrup (or
     agave nectar), salt, and pepper to the pot. Bring the mixture to a simmer
     and let it cook for about 15-20 minutes, allowing the flavors to meld.
- While
     the broth is simmering, prepare the tofu by cubing it and pan-frying until
     golden brown on each side. Set aside.
- Cook
     the ramen noodles according to the package instructions. Drain and set
     aside.
- In the
     last 5 minutes of cooking the broth, add the shiitake mushrooms, bok choy,
     and carrots. Cook until the vegetables are tender but still crisp.
- Assemble
     your ramen bowls by placing a portion of cooked noodles in each bowl.
     Ladle the hot broth and vegetables over the noodles.
- Top
     each bowl with the pan-fried tofu, green onions, and sesame seeds.
- Serve
     immediately and enjoy your delicious vegan ramen!
