Spinach and Ricotta Ravioli Recipe
Ingredients:
For the Pasta Dough:
- 2 cups
     all-purpose flour
- 3
     large eggs
- 1/2
     teaspoon salt
- 1-2
     tablespoons water (if needed)
For the Filling:
- 1 cup
     ricotta cheese
- 1 cup
     fresh spinach, finely chopped
- 1/2
     cup Parmesan cheese, grated
- 1 egg
- 1
     clove garlic, minced
- Salt
     and pepper to taste
For the Sauce:
- 2
     tablespoons unsalted butter
- 2
     cloves garlic, minced
- Fresh
     basil, chopped (for garnish)
- Parmesan
     cheese, grated (for serving)
Instructions:
Make the Pasta Dough:
- In a
large mixing bowl, combine the flour and salt. Make a well in the center
and crack the eggs into it.
- Using
a fork, gradually incorporate the flour into the eggs until a dough forms.
If the dough seems too dry, add water a little at a time until it comes
     together.
- Knead
the dough on a floured surface for about 8-10 minutes until it becomes
smooth and elastic. Wrap it in plastic wrap and let it rest for at least
     30 minutes.
Prepare the Filling:
- In a
mixing bowl, combine ricotta cheese, chopped spinach, Parmesan cheese,
minced garlic, and one egg. Mix until well combined.
- Season
the mixture with salt and pepper to taste. Set the filling aside.
Roll Out the Dough:
- Divide
the rested pasta dough into two portions. Roll out each portion into thin
sheets using a pasta machine or a rolling pin.
- Place
one sheet of pasta on a floured surface. Spoon small mounds of the filling
onto the sheet, leaving space between each.
- Brush
a little water around each mound of filling. Place the second sheet of
pasta on top and press around each mound to seal, removing any air
     bubbles.
- Use a
ravioli cutter or a knife to cut out individual ravioli. Ensure they are
     well-sealed.
Cook the Ravioli:
- Bring
a large pot of salted water to a gentle boil. Carefully add the ravioli
and cook for about 3-5 minutes or until they float to the surface.
- Remove
the cooked ravioli with a slotted spoon and place them on a serving plate.
Make the Sauce:
- In a
pan, melt butter over medium heat. Add minced garlic and sauté until
     fragrant.
- Pour
the garlic butter sauce over the cooked ravioli. Garnish with fresh
chopped basil and grated Parmesan cheese.
- Serve
immediately and enjoy your homemade spinach and ricotta ravioli!
This recipe offers a delightful combination of fresh pasta,
a creamy filling, and a flavorful buttery sauce. It's a perfect dish for a
