Ingredients:

For the Pasta Dough:

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1-2 tablespoons water (if needed)

For the Filling:

  • 1 cup ricotta cheese
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1 clove garlic, minced
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Fresh basil, chopped (for garnish)
  • Parmesan cheese, grated (for serving)

Instructions:

Make the Pasta Dough:

  1. In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it.
  2. Using a fork, gradually incorporate the flour into the eggs until a dough forms. If the dough seems too dry, add water a little at a time until it comes together.
  3. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

Prepare the Filling:

  1. In a mixing bowl, combine ricotta cheese, chopped spinach, Parmesan cheese, minced garlic, and one egg. Mix until well combined.
  2. Season the mixture with salt and pepper to taste. Set the filling aside.

Roll Out the Dough:

  1. Divide the rested pasta dough into two portions. Roll out each portion into thin sheets using a pasta machine or a rolling pin.
  2. Place one sheet of pasta on a floured surface. Spoon small mounds of the filling onto the sheet, leaving space between each.
  3. Brush a little water around each mound of filling. Place the second sheet of pasta on top and press around each mound to seal, removing any air bubbles.

Cook the Ravioli:
