Homemade Udon Noodles Recipe
Ingredients:
For the Udon Noodles:
- 2 cups
all-purpose flour
- 3/4
cup water
- 1/2
teaspoon salt
- Additional
flour for dusting
For the Udon Soup:
- 4 cups
dashi broth (or vegetable broth for a vegetarian option)
- 1/4
cup soy sauce
- 2
tablespoons mirin
- 1
tablespoon sake (optional)
- 1
tablespoon sugar
- 1
tablespoon sesame oil
- Toppings:
Sliced green onions, shredded nori (seaweed), and thinly sliced radishes
Instructions:
Make the Udon Noodles:
- In a
large mixing bowl, combine the all-purpose flour and salt. Gradually add
water while stirring until the mixture forms a dough.
- Knead
the dough on a floured surface for about 10-15 minutes, or until it
becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest
for at least 30 minutes.
- Roll
out the rested dough on a floured surface to about 1/8-inch thickness.
Fold the dough in half and then in half again. Cut into thin strips to
form the udon noodles.
- Dust
the noodles with additional flour to prevent sticking. Set aside until
ready to cook.
Cook the Udon Noodles:
- Bring
a large pot of water to a boil. Add the udon noodles and cook for 8-10
minutes, or until they are tender but still have a slight chewiness.
- Drain
the noodles and rinse them under cold water. Set aside.
Prepare the Udon Soup:
- In a
separate pot, combine the dashi broth, soy sauce, mirin, sake (if using),
sugar, and sesame oil. Bring the mixture to a simmer over medium heat.
- Adjust
the seasoning to taste, adding more soy sauce or sugar if needed.
Assemble the Udon Soup:
- Divide
the cooked udon noodles among serving bowls.
- Pour
the hot udon soup over the noodles, ensuring each bowl gets a good amount
of broth.
- Garnish
the udon soup with sliced green onions, shredded nori, and thinly sliced
radishes.
- Serve
immediately and enjoy your homemade udon noodles!
