Vegetarian Lasagna Recipe
Ingredients:
For the Vegetable Filling:
- 2
     tablespoons olive oil
- 1
     onion, finely chopped
- 2
     cloves garlic, minced
- 1
     zucchini, diced
- 1 red
     bell pepper, diced
- 1
     yellow bell pepper, diced
- 1
     carrot, grated
- 1 cup
     mushrooms, sliced
- 1 can
     (14 oz) diced tomatoes
- 1 can
     (14 oz) tomato sauce
- 2
     teaspoons dried oregano
- 2
     teaspoons dried basil
- Salt
     and pepper to taste
For the Ricotta Filling:
- 2 cups
     ricotta cheese
- 1 egg
- 1/4
     cup fresh basil, chopped
- Salt
     and pepper to taste
Additional Ingredients:
- 9
     lasagna noodles, cooked according to package instructions
- 3 cups
     shredded mozzarella cheese
- 1 cup
     grated Parmesan cheese
Instructions:
- Preheat
     the Oven: Preheat your oven to 375°F (190°C).
- Prepare
     the Vegetable Filling:
- In a
      large skillet, heat olive oil over medium heat. Add chopped onions and
      garlic, sauté until onions are translucent.
- Add
      zucchini, red bell pepper, yellow bell pepper, carrot, and mushrooms.
      Cook until vegetables are tender.
- Stir
      in diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer
      for 10-15 minutes.
- Make
     the Ricotta Filling: In a bowl, combine ricotta cheese, egg, chopped
     basil, salt, and pepper. Mix well.
- Assemble
     the Lasagna:
- Spread
      a thin layer of the vegetable sauce in the bottom of a baking dish.
- Place
      three lasagna noodles on top of the sauce.
- Spread
      half of the ricotta mixture over the noodles.
- Sprinkle
      with a third of the mozzarella and Parmesan cheeses.
- Repeat
      the layers, finishing with a layer of vegetable sauce and the remaining
      cheeses on top.
- Bake:
     Cover the baking dish with aluminum foil and bake in the preheated oven
     for 25-30 minutes. Then, remove the foil and bake for an additional 10-15
     minutes until the cheese is golden and bubbly.
- Let
     it Rest: Allow the lasagna to rest for 10 minutes before slicing.
- Serve
     and Enjoy: Slice the lasagna into portions and garnish with fresh
