 Vegetarian Lasagna Recipe


Ingredients:

For the Vegetable Filling:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 carrot, grated
  • 1 cup mushrooms, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) tomato sauce
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • Salt and pepper to taste

For the Ricotta Filling:

  • 2 cups ricotta cheese
  • 1 egg
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Additional Ingredients:

  • 9 lasagna noodles, cooked according to package instructions
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Vegetable Filling:
    • In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until onions are translucent.
    • Add zucchini, red bell pepper, yellow bell pepper, carrot, and mushrooms. Cook until vegetables are tender.
    • Stir in diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for 10-15 minutes.
  3. Make the Ricotta Filling: In a bowl, combine ricotta cheese, egg, chopped basil, salt, and pepper. Mix well.
  4. Assemble the Lasagna:
    • Spread a thin layer of the vegetable sauce in the bottom of a baking dish.
    • Place three lasagna noodles on top of the sauce.
    • Spread half of the ricotta mixture over the noodles.
    • Sprinkle with a third of the mozzarella and Parmesan cheeses.
    • Repeat the layers, finishing with a layer of vegetable sauce and the remaining cheeses on top.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  6. Let it Rest: Allow the lasagna to rest for 10 minutes before slicing.
