Vegan Sushi Bowl Recipe:
Ingredients:
For the Sushi Rice:
- 2
     cups sushi rice
- 3
     cups water
- 1/2
     cup rice vinegar
- 3
     tablespoons sugar
- 1
     teaspoon salt
For the Tofu:
- 1
     block extra-firm tofu, pressed and cubed
- 2
     tablespoons soy sauce
- 1
     tablespoon sesame oil
- 1
     tablespoon rice vinegar
- 1
     teaspoon agave syrup or maple syrup
- Sesame
     seeds for garnish
For the Sushi Bowl:
- Nori
     (seaweed) sheets, shredded
- 1
     cucumber, julienned
- 1
     avocado, sliced
- 1
     carrot, julienned
- 1
     radish, thinly sliced
- 1
     cup edamame, steamed
- Soy
     sauce for serving
- Pickled
     ginger and wasabi for serving
Time:
- Preparation
     Time: 30 minutes (including tofu marination)
- Cooking
     Time: 20 minutes (for rice and tofu)
Servings:
- This
     recipe yields approximately 4 servings.
Instructions:
1. Sushi Rice:
- Rinse
     the sushi rice under cold water until the water runs clear.
- In
     a rice cooker or on the stovetop, cook the rice according to package
     instructions.
- In
     a small saucepan, heat rice vinegar, sugar, and salt over low heat until
     the sugar and salt dissolve.
- Once
     the rice is cooked, transfer it to a large bowl. Pour the vinegar mixture
     over the rice and gently fold it in. Let it cool to room temperature.
2. Marinated Tofu:
- In
     a bowl, whisk together soy sauce, sesame oil, rice vinegar, and agave
     syrup.
- Add
     the cubed tofu to the marinade and let it marinate for at least 15-20
     minutes.
- In
     a pan over medium heat, sauté the marinated tofu until golden brown.
     Sprinkle sesame seeds on top.
3. Assembling the Sushi Bowls:
- Divide
     the sushi rice among serving bowls.
- Arrange
     the marinated tofu, shredded nori, julienned cucumber, sliced avocado,
     julienned carrot, radish slices, and steamed edamame on top of the rice.
4. Serving:
- Serve
     the sushi bowls with soy sauce on the side for dipping.
- Garnish
     with pickled ginger and wasabi.
- Sprinkle
     extra sesame seeds and nori on top for added texture.
5. Enjoy!
