Instructions:
1. Sushi Rice:
- Rinse
the sushi rice under cold water until the water runs clear.
- In
a rice cooker or on the stovetop, cook the rice according to package
instructions.
- In
a small saucepan, heat rice vinegar, sugar, and salt over low heat until
the sugar and salt dissolve.
- Once
the rice is cooked, transfer it to a large bowl. Pour the vinegar mixture
over the rice and gently fold it in. Let it cool to room temperature.
2. Marinated Tofu:
- In
a bowl, whisk together soy sauce, sesame oil, rice vinegar, and agave
syrup.
- Add
the cubed tofu to the marinade and let it marinate for at least 15-20
minutes.
- In
a pan over medium heat, sauté the marinated tofu until golden brown.
Sprinkle sesame seeds on top.
3. Assembling the Sushi Bowls:
- Divide
the sushi rice among serving bowls.
- Arrange
the marinated tofu, shredded nori, julienned cucumber, sliced avocado,
julienned carrot, radish slices, and steamed edamame on top of the rice.
4. Serving:
- Serve
the sushi bowls with soy sauce on the side for dipping.
- Garnish
with pickled ginger and wasabi.
- Sprinkle
extra sesame seeds and nori on top for added texture.
