Vegan Tacos Recipe

 Vegan Tacos:


Ingredients:

For the Black Beans:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

For the Guacamole:

  • 2 ripe avocados, mashed
  • 1 small tomato, diced
  • 1/4 cup red onion, finely chopped
  • 1 clove garlic, minced
  • 1 lime, juiced
  • Salt and pepper to taste

For the Salsa:

  • 1 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped (optional for heat)
  • 1 lime, juiced
  • Salt and pepper to taste

Additional Toppings:

  • Shredded lettuce
  • Vegan cheese, shredded
  • Corn or flour tortillas

Instructions:

1. Prepare the Black Beans:

  • In a pan, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
  • Add black beans, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes, mashing some of the beans with a fork. Set aside.

2. Make the Guacamole:

  • In a bowl, combine mashed avocados, diced tomatoes, chopped red onion, minced garlic, lime juice, salt, and pepper. Mix well and set aside.

3. Prepare the Salsa:

  • In another bowl, combine quartered cherry tomatoes, chopped red onion, cilantro, jalapeño (if using), lime juice, salt, and pepper. Mix well and set aside.

4. Warm the Tortillas:

  • Heat the tortillas in a dry skillet or oven until warm and pliable.

5. Assemble the Tacos:

  • Spoon the seasoned black beans onto each tortilla.
  • Top with shredded lettuce, vegan cheese, guacamole, and salsa.

6. Serve:

  • Serve the vegan tacos with additional lime wedges on the side.
