Vegan Tacos:
Ingredients:
For the Black Beans:

(15 oz) black beans, drained and rinsed

cherry tomatoes, quartered
- 1/4
cup red onion, finely chopped

Additional Toppings:
- Shredded
lettuce
- Vegan

Instructions:
1. Prepare the Black Beans:
- In a
pan, heat olive oil over medium heat. Add chopped onions and garlic, sauté
until softened.
- Add
black beans, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes,
mashing some of the beans with a fork. Set aside.
2. Make the Guacamole:
- In a
bowl, combine mashed avocados, diced tomatoes, chopped red onion, minced
garlic, lime juice, salt, and pepper. Mix well and set aside.
3. Prepare the Salsa:
- In
another bowl, combine quartered cherry tomatoes, chopped red onion,
cilantro, jalapeño (if using), lime juice, salt, and pepper. Mix well and
set aside.
4. Warm the Tortillas:
- Heat
the tortillas in a dry skillet or oven until warm and pliable.
5. Assemble the Tacos:
- Spoon
the seasoned black beans onto each tortilla.
- Top
with shredded lettuce, vegan cheese, guacamole, and salsa.
6. Serve:
- Serve
the vegan tacos with additional lime wedges on the side.
