Gajar Ka Halwa

Gajar ka Halwa, also known as Carrot Halwa, is a popular Indian dessert made with grated carrots, milk, sugar, and ghee. Here's a detailed recipe for you:

Ingredients:



2 cups grated carrots (about 4-5 medium-sized carrots)

3 cups full-fat milk

1/2 cup ghee (clarified butter)

1 cup sugar (adjust according to taste)

1/2 cup chopped nuts (almonds, cashews, and pistachios)

1/2 teaspoon cardamom powder

A pinch of saffron strands (optional)

1 tablespoon raisins (optional)

 

Preparation:

Wash, peel, and grate the carrots using a fine grater.

Chop the nuts and keep them aside.

Soak saffron strands in 1 tablespoon of warm milk (if using).

Cooking the Carrots:

In a heavy-bottomed pan or kadai, heat 2 tablespoons of ghee.

Add the grated carrots and sauté them on medium heat until they are cooked and the raw smell disappears. This may take about 8-10 minutes.

Adding Milk:



Once the carrots are cooked, add 3 cups of full-fat milk to the pan.

Cook the carrots in milk on medium heat, stirring frequently to prevent sticking.

Continue cooking until the milk reduces and thickens, and the mixture attains a creamy consistency. This can take 30-40 minutes.

Adding Sugar:

Add sugar to the mixture and stir well.

Continue cooking on low to medium heat until the sugar dissolves, and the halwa thickens further. This may take another 15-20 minutes.

Adding Ghee and Nuts:

In a separate small pan, heat the remaining ghee.

Add chopped nuts and sauté until they turn golden brown.

Add the nuts along with the ghee to the halwa mixture.

Also, add cardamom powder and saffron-soaked milk (if using).

Final Touch:

Cook the halwa on low heat, stirring continuously until it reaches a halwa consistency, and the ghee starts to separate from the mixture.

Garnish:



Garnish with more chopped nuts and raisins if desired.

Serve:

Gajar ka Halwa can be served warm or cold. It tastes delicious on its own or can be accompanied by a scoop of vanilla ice cream for an extra treat.
