delighted to share the recipe for Litti Chokha, a traditional dish from the Indian state of Bihar. Litti Chokha is a flavorful and wholesome dish consisting of wheat flour balls stuffed with roasted gram flour and spices, served with a side of mashed vegetables. Let's get started:

Litti Ingredients:


For the Dough:

  • 2 cups whole wheat flour
  • 1 tablespoon ghee (clarified butter)
  • Water for kneading

For the Filling:

  • 1 cup roasted gram flour (sattu)
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon ajwain (carom seeds)
  • 1 teaspoon kalonji (nigella seeds)
  • 1 teaspoon salt
  • 2 tablespoons mustard oil
  • Water (as needed for binding)

Chokha Ingredients:

For Baingan (Eggplant) Chokha:

  • 1 large eggplant
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

For Tamatar (Tomato) Chokha:

  • 4-5 ripe tomatoes
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

For Litti:


  1. In a large mixing bowl, combine the whole wheat flour and ghee. Gradually add water and knead the mixture into a firm dough. Cover and let it rest for 30 minutes.
  2. In a separate bowl, mix roasted gram flour (sattu), chopped onion, green chilies, ginger-garlic paste, ajwain, kalonji, salt, and mustard oil. Add water gradually to form a stuffing with a crumbly texture.
  3. Preheat your oven to 180°C (356°F).
  4. Divide the dough into small lemon-sized balls. Flatten each ball in your palm, place a portion of the stuffing in the center, and seal the edges to form a round ball.
  5. Place the stuffed balls on a baking tray and bake for 25-30 minutes or until they turn golden brown.

For Chokha:

Baingan Chokha:


  1. Roast the eggplant over an open flame until the skin is charred and the flesh is soft. Peel the skin and mash the pulp.
  2. In a mixing bowl, combine the mashed eggplant, chopped onion, tomatoes, green chilies, mustard oil, and salt. Mix well.
  3. Garnish with fresh coriander leaves.

Tamatar Chokha:


  1. Roast the tomatoes over an open flame until the skin is charred. Peel the skin and mash the pulp.
  2. In a mixing bowl, combine the mashed tomatoes, chopped onion, green chilies, mustard oil, and salt. Mix well.
  3. Garnish with fresh coriander leaves.

Serving:

  1. Serve the hot Litti with both Baingan and Tamatar Chokha on the side.
  2. You can also add a dollop of ghee on top of Litti for added flavor.
